Lentil Soup

Note: This soup is filling and yummy. It contains 18g net carbs, 20g protein and only 1.5g fat! 


Ingredients


Non stick, non fat cooking spray  (like Pam's)
1 chopped medium green bell pepper
1/2 cup Refried Pinto Beans (Organic - available at Trader Joe's)
2 cups of water
6 strips of chicken-less strips (available at Trader Joe's)
2 Tbsp fat free sour cream
3-4 Sliced jalapeno peppers
Pepper powder to taste
Salt to taste


Method

  1. Heat cooking pan on a medium flame.
  2. Spray pan with non-stick, non-fat cooking spray. I like Pam's butter flavored spray.
  3. Add chopped bell pepper and stir fry till soft and a bit brown at the edges.
  4. Add refried pinto beans and water.
  5. Stir to create a consistent mixture.
  6. Add chicken less strips.
  7. Bring to boil and let simmer for 2 minutes.
  8. Turn off flame.
  9. Add sliced jalapeno peppers, salt and pepper to taste.
  10. Pour into a bowl and top with sour cream.
