Ingredients
Non stick, non fat cooking spray (like Pam's)
1 chopped medium green bell pepper
1/2 cup Refried Pinto Beans (Organic - available at Trader Joe's)
2 cups of water
6 strips of chicken-less strips (available at Trader Joe's)
2 Tbsp fat free sour cream
3-4 Sliced jalapeno peppers
Pepper powder to taste
Salt to taste
Method
- Heat cooking pan on a medium flame.
- Spray pan with non-stick, non-fat cooking spray. I like Pam's butter flavored spray.
- Add chopped bell pepper and stir fry till soft and a bit brown at the edges.
- Add refried pinto beans and water.
- Stir to create a consistent mixture.
- Add chicken less strips.
- Bring to boil and let simmer for 2 minutes.
- Turn off flame.
- Add sliced jalapeno peppers, salt and pepper to taste.
- Pour into a bowl and top with sour cream.
